1. Goat Cheese Bites with Orange Zest

Ingredients: 30 sweet potato and beet chips, 4 ounce goat cheese, 2-3 tablespoon honey, 1/4 teaspoon chilli flakes, pinch of ground ginger and freshly grated orange zest and for garnishing we need sprouts or Microgreens.

Recipe: Take a bowl and mix honey, ginger, orange zest and chilli flakes. Now before serving, top the chips with goat cheese, the mixture, a little more orange drizzle and sprouts.

2. Pomegranate and Polenta Wedges

Ingredients: 3/4 cup of pomegranate seeds, 1 and half cups of instant polenta, 2/3 cup of Greek yogurt (non fat), 2 tablespoon of sage leaves (finely chopped), olive oil cooking spray and 6 tablespoon sliced almonds.

Recipe: Boil 4 and half cups of water (with salt) and then add polenta. Cook polenta thoroughly on low flame and add chopped sage. Now transfer polenta to a greased 9×13 inch pan and let it cool.

Heat the broiler pan by placing it 6-7 inches away from the heat. Roll polenta out of the pan to a cutting board and cut triangles (wedges) out of it. Put all the wedges on a foil-lined baking sheet and disperse some more sage leaves around the wedges and spray the sheet with olive oil cooking spray.

Bake for 3-5 minutes, till the wedges turn golden and crisp. Let them cool off for 1-2 minutes and then garnish with yogurt, almonds and pomegranate seeds.
