 Seri Muka (Glutinous Rice Layer)

½ grated coconut
275ml water
650g glutinous rice (pulut)
1 tsp salt
A few banana leaves (to line tin)
Green Layer Ingredients
2 coconuts (grated)
300ml water
150g sugar
8 eggs
16 pandan leaves
80g tapioca flour
70g wet rice flour
1. To prepare glutinous rice layer: Squeeze the grated coconut for thick coconut milk (santan) without adding water. Add in water and squeeze for coconut milk (santan). Wash glutinous rice and drain water; mix with second coconut milk and add in salt.
2. Prepare steamer and line steamer tray with banana leaves. Spread rice evenly on tray and steam for 30 minutes. Add in second coconut milk and steam for 15 minutes.
3. Grease a rectangular baking tin and put in glutinous rice. Press down the rice firmly so that the rice is spread evenly and well-packed.
4. To prepare green layer: Squeeze coconut for thick coconut milk (santan). Add water and squeeze for second coconut milk. Mix sugar and eggs. Put into saucepan: add in the thick coconut milk and stir. Pound pandan leaves and squeeze out juice. Mix the tapioca and rrice flour with second coconut milk and pandan juice. Add this mixture to the sugar and egg mixture.
5. Cook over low heat till mixture thickens.
6. Pour mixture over glutinous rice layer: steam for 30 minutes.
7. Remove from steamer. Leave to cool overnight. To serve, cut into small pieces.
